The green asparagus, sprouting in sunlight like the purple, has a strong flavor and its bud has a sweet taste. It is the only asparagus that does not need to be peeled.
The only work allowed is the washing and cooling in cold water.
Asparagus is a vegetable richer in fiber and contains limited amounts of fats, proteins and sugars, but is rich in minerals such as calcium, phosphorus, magnesium and potassium. This vegetable also has a content of antioxidants, vitamin A, vitamin B6 and vitamin C and is an excellent source of folic acid.
